Ingredients:
- 1 pound ground turkey
- 1 slice whole wheat bread with crust removed
- 2 cups baby spinach
- 1 yellow onion grated
- 3 garlic cloves minced
- ½ cup chopped fresh parsley
- 1 egg beaten
- ½ cup feta cheese crumbled
- 1 tablespoon dried crushed mint
- 1 tablespoon extra virgin olive oil
- Kosher salt and black pepper
Directions:
- Preheat the oven to 400 degrees Fahrenheit.
- Toast the bread until it is golden brown, then place it in a bowl and cover it with water. Soak for approximately 5 minutes or until very tender. Throw away the water, press the bread dry, and break it up somewhat with your hands.
- Warm 1 tablespoon of extra virgin olive oil in a skillet. Cook the spinach gently over medium heat until it has wilted somewhat. Remove from heat and allow it momentarily cool.
- Make the mixture for the meatballs. Put the ground turkey, garlic, onions, crumbled feta, egg, parsley, & mint in a large bowl and mix well.
- Add the bread and spinach that has wilted. Add a lot of kosher salt and black pepper to taste. Mix together well.
- Make golf-ball-sized balls out of the mixture and place them on a large, lightly oiled sheet pan.
- Bake in a hot oven for about 30 minutes or until the balls are fully cooked.
- Move to the top rack and turn on the broiler for a few minutes or until the tops are golden brown.
- Serve immediately with your choice of salad, rice, or gravy.
