Chicken and Andouille Sausage File’ Gumbo
There are LOT of different Gumbo in Louisiana. This one is our family’s favorite. We start with a deep dark roux, add planty of trinity (onion, celery, bell pepper), and garlic along with other spices to give it a rich flavor to compliment the chicken and adouille sausage. This gumbo uses file’ (crushed sassafras leaves) for a unique flavor and to add a little thickness. Go ahead and add a little extra file’ if you want it little thicker or ground red pepper if you want it hotter!
Chicken and Andouille Sausage Jambalaya
Jambalaya in Louisiana have as many variations as Gumbo’s do. We at meOmyO’s are making the one our family likes the best (hope you like it too). This dish combines the rich flavor of the trinity and garlic with other spices to create a rich flavor.
Red Beans and Rice with Andouille Sausage
Our red beans are slowly cooked with the trinity, garlic, ham, and Cajun seasonings. We serve it over rice and throw in some andouille sausage to make it hearty bowl.
Our family has worked on this recipe for years and it’s just the way we like it. Starting with light roux and lots of trinity and garlic, we season it to perfection and slow simmer it until the flavor meld with crawfish into a rich sauce. Served over rice with two sides and hushpuppies.
Pretty much read the above paragraph and replace the word crawfish with shrimp and you’ve got it.
Cajun Roast beef and Debris gravy$11.95
We start with a large roast slathered in the dark roux with the trinity, garlic, a little file’, and other spices and slow cook it until it falls apart at the touch of a fork. The rich debris gravy created during the cooking process is poured over the top. served over rice with two sides and hushpuppies.

Shrimp & Crawfish Etouffee over Crabcakes$14.95

A Louisiana favorite. 1/2 lb. of spicy boudin hand breaded and fried golden brown. Served with dipping sauce. Go ahead and add little drop of hot sauce before you take a bite. Goes great on crackers or just dig right in.
WE tenderize and hand bread /3 pounds of testy morsels right here in our kitchen to save you trouble of having to go out and catch and prepare your own gator. Served with fries and dipping sauce.
