This dish combines the rich flavor of the trinity and garlic with other spices to create a rich flavor that can only be achieved by following the recipe without shortcuts. Dude's Chicken and Andouille Sausage Filet Gumbo

There are a LOT of different gumbos in Louisiana. This one is our family's favorite and is my brother Dude's specialty. We start with a deep dark roux, add plenty of trinity (onion, celery, bell pepper) and garlic along with other spices to give it a rich flavor to compliment the chicken and andouille sausage. This gumbo uses filet (crushed sassafras leaves) for a unique flavor and to add a little thickness to the broth. Go ahead and add a little extra filet if you want it a little thicker or ground red pepper if you want it hotter! Served over rice with your choice of side and hushpuppies.

My brother Buddy has worked on this recipe for years and has it just the way we like it. Starting with a light roux, and lots of the trinity and garlic, we season it to perfection and slow simmer it until the flavors meld with the crawfish into a rich sauce. Served over rice with your choice of side and hushpuppies.
